Easy Peach Cobbler

I adore fresh peaches in any form! We are lucky enough at Sugar Drop to have local product delivered to us weekly from a nearby farm. We use local eggs in all of our baked goods, local jam, and produce when in season. 

This Easy Peach Cobbler is all dumped in one bowl and poured into a baking dish, making it a dreamboat for clean up. It's delicious with a scoop of vanilla ice cream or great warmed for breakfast on it's own. 

Easy Peach Cobbler

6-8 Ripe Peaches

1 Stick Unsalted Butter

1 Cup Self Rising Flour

1 Cup White Sugar

1/2 Cup Brown Sugar

1/2 tsp Salt

1/2 tsp Cinnamon

1/2-3/4 Cup Milk or Cream

1. Preheat oven to 350 degrees. Once warmed, place whole stick of butter into baking dish and place in the oven, allowing the stick to melt and coat the pan. 

2. Over a large bowl, use a paring knife to slice the peaches off of the pit. I don't remove the skin as I enjoy the extra texture, but feel free to remove it. 

3. Add all remaining dry ingredients. Batter will be thick. Add 1/2 cup of milk and stir. You want the batter to be just past a paste consistency. If the batter is still too thick, add in the additional 1/4 of cream. 

4. Pour into prepared baking dish. Sprinkle with a light pinch of sea salt and bake for 40 minutes until lightly golden. The brown sugar will cause a beautiful chewy texture around the edges. Grab a spoon and dig in!
